Crisp ginger cookie recipe WITHOUT moles?

I'm not sure what moles does for the cookie but I just want to make one batch of ginger cookies and don't want moles sitting around in my kitchen forever. I'm looking for a really crispy ginger cookie, NOT SOFT OR CHEWY.
